From Mitzpe Ramon we drove down to Eilat, which is at the very southern tip of Israel on the Gulf of Aqaba, which empties into the Red Sea. We only spent a minimal amount of time in Eilat; it's main purpose for us was as a launching point to other places.
We spent a day trip going to Petra, in Jordan, along with George and Judy. I didn't think we would be able to manage it, and that it was going to be too much of a hassle, or too rushed, but it worked out fine and we're really glad we went. Having 2 days would have been a little better, but even with only 1 day it was worth it. And splitting the cost with 4 people, taking a private taxi turned out to be significantly cheaper than had we signed up for some group tour.
It's an amazing place. You should go to Petra. Really. Of all the places we've visited together, I think there are just two that I would absolutely recommend you should try to see at some point in your life, and one of those is Petra. (The other is the Angkor temples in Siem Reap, Cambodia.)
